Coffee Fruit Cake

Ingredients

  • 300g sultanas
  • 300g raisins
  • 100g apricots
  • 100g dates
  • 250g block PHILADELPHIA Light Cream Cheese, softened
  • 1/2 cup brown sugar, lightly packed
  • 1 1/2 teaspoon nutmeg
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon instant coffee
  • 1 cup water
  • 2 eggs
  • 1 1/4 cups plain flour
  • 1/2 cup self-raising flour

Directions

    Combine fruit, Philly*, sugar, spices, bicarbonate of soda and coffee and water in a saucepan.

    Bring to the boil, stirring, then allow to cool.

    Add the eggs and mix well.

    Sift in the flours, and stir until combined.

    Pour into a lined 23cm square pan.

    Bake at 180C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
