- 1 Tbsp. instant coffee
- 2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 6 eggs
- 1/2 tsp. cream of tartar
- 2 c. sugar
- 1 tsp. vanilla
Directions

1Dissolve coffee in 1 cup boiling water.

2Separate the eggs. Beat yolks.

3Add 1 1/2 cups sugar.

4To this, add alternately the dry ingredients and coffee. Beat whites until stiff.

5Add cream of tartar.

6Fold into batter the vanilla.

7Bake in ungreased pan (angel food is best) at 350° for 60 to 70 minutes.
