  • 6 whole Potatoes, Peeled And Quartered
  • 1 whole Sweet Onion, Chopped Medium Fine
  • 1/2 whole Cabbage, Shredded Finely As For Coleslaw (or 1 Package Angel Hair Shredded Cabbage)
  • 1 Tablespoon Salt, Or To Taste
  • 1-1/2 stick Butter, Divided
  • 1/2 cups Cream

Directions

    Peel and quarter the potatoes and cover with water. Add salt. Bring to a boil and cook until fork-tender. Mash with 1/2 stick butter and 1/2 cup cream.

    Meanwhile, melt remaining stick of butter in a skillet and add chopped onion and shredded cabbage. Reduce heat to low and cover skillet. Do not brown, just cook until onion is translucent. Stir mashed potatoes into cabbage-onion mixture and adjust seasonings.

    Great with ham. Serves six.
