Cold Flatbread Pizzas

Ingredients

  • 4 tablespoons balsamic vinegar
  • 10 tablespoons olive oil
  • 1 pinch granulated sugar
  • 1/2 pound buffalo mozzarella diced
  • 13 1/2 ounces artichoke hearts drained and sliced
  • 7 ounces tuna cans, drained
  • 7 tomatoes sliced
  • 1 onion small, finely diced
  • 5 tablespoons fresh basil leaves
  • 1 flatbread large, round, halved horizontally

Directions

    Whisk vinegar, 4 tbsp oil and a pinch of sugar and season. Toss with mozzarella, artichoke, tuna, tomatoes, onion and basil and set aside to marinate for 15 mins.

    Drizzle cut sides of flatbread with olive oil. Spread topping over each 1/2 and serve.
