  • 2 c. Carolina rice (use only Carolina brand)
  • 2 eggs (yolks only)
  • 1/2 c. Parmesan cheese
  • 1 stick (8 Tbsp.) butter
  • egg whites
  • bread crumbs
  • 4 or 5 meatballs, mashed with sauce

Directions

    Cook rice according to package directions.

    Transfer hot rice into large aluminum pan.

    Stir in butter until melted.

    Add cheese and egg yolks.

    Mix well.
