Cold Marinated Grape Tomatoes

  • 8 cups Assorted Grape Tomatoes (Red, Orange, Yellow), Rinsed Well, Cut In Half
  • 2 whole Shallots Minced Or Grated Finely
  • 3/4 cups Extra Virgin Olive Oil
  • 1/4 cups White Wine Vinegar
  • 3 sprigs Fresh Thyme Chopped Finely
  • 2 Tablespoons Fresh Basil, Chopped Finely
  • 2 Tablespoons Kosher Or Sea Salt
  • 1 Tablespoon Black Pepper
  • 2 pinches Red Pepper Flakes

Directions

    In a large mixing bowl add the grape tomato halves, shallots, oil, vinegar, thyme, basil, salt, pepper and red pepper flakes. Stir well. Cover with plastic wrap and refrigerate overnight.

    I use this condiment in salads, with pastas, fish and chicken main courses. It is just delicious! Enjoy!
