Cold Poached Salmon

Ingredients

  • 2 c. water
  • 1 c. dry white wine
  • 1 tsp. salt
  • 1/4 tsp. dried thyme leaves
  • 1/4 tsp. dried tarragon
  • 5 peppercorns
  • 4 parsley sprigs
  • 1 stalk celery, chopped
  • 1 small onion, sliced
  • 1 bay leaf
  • 4 salmon steaks (1-inch thick)

Directions

    Heat water, wine, salt, thyme, tarragon, peppercorns, parsley, onion, celery and bay leaf to boil.

    Reduce heat.

    Cover and simmer for 5 minutes.

    Place salmon steaks in skillet.

    Add water if necessary to cover.

    Heat to boiling.

    Reduce heat and simmer, uncovered, until fish flakes easily with fork, 12 to 15 minutes. Carefully remove fish. Drain on wire rack.

    Cover and refrigerate until cold.
