Ingredients
- 2 c. water
- 1 c. dry white wine
- 1 tsp. salt
- 1/4 tsp. dried thyme leaves
- 1/4 tsp. dried tarragon
- 5 peppercorns
- 4 parsley sprigs
- 1 stalk celery, chopped
- 1 small onion, sliced
- 1 bay leaf
- 4 salmon steaks (1-inch thick)
Directions

1Heat water, wine, salt, thyme, tarragon, peppercorns, parsley, onion, celery and bay leaf to boil.

2Reduce heat.

3Cover and simmer for 5 minutes.

4Place salmon steaks in skillet.

5Add water if necessary to cover.

6Heat to boiling.

7Reduce heat and simmer, uncovered, until fish flakes easily with fork, 12 to 15 minutes. Carefully remove fish. Drain on wire rack.

8Cover and refrigerate until cold.
