Ingredients
- 2 lb. carrots, sliced like coins
- 2 medium onions, sliced thinly
- 2 green peppers, sliced into rings or strips
- 1 can condensed tomato soup or substitute 1 1/2 c. homemade tomato sauce for fresher flavor
- 3/4 c. sugar
- 1/3 c. vinegar (cider vinegar preferred)
- 1/2 c. salad oil
- 1 Tbsp. prepared mustard
Directions

1Briefly cook the carrot coins by the desired method.

2Drain well and mix with raw onions and pepper strips.

3Place in a nonmetallic bowl with lid.

4Use a wire whisk and electric blender or food processor to combine soup, sugar, vinegar, oil and mustard.

5Pour over vegetables.

6Cover and marinate overnight. Makes 10 servings.
