Steamed Chicken With Pineapple

  • 3 1/2 lb. frying chicken
  • vegetable oil (for deep frying)
  • 5 slices ginger root or 1 tsp. ground ginger
  • 2 green onions, cut in small pieces
  • 3 Tbsp. soy sauce
  • 1 Tbsp. sugar
  • 2 Tbsp. dry sherry
  • 1 tsp. salt
  • 1 (8 oz.) can pineapple chunks
  • 1 Tbsp. cornstarch

    With a sharp cleaver, cut the chicken into 2-inch pieces (bone and all), or have the butcher do it.

    Heat the oil to 365°.

    Fry the chicken in it until browned; drain.

    Put chicken pieces in a bowl and the ginger root, green onion, soy sauce, sugar, sherry and salt.

    Place bowl on a rack in a pan of boiling water.

    Cover and steam for 40 minutes, or until tender.
