Steamed Chicken With Pineapple

- 3 1/2 lb. frying chicken
- vegetable oil (for deep frying)
- 5 slices ginger root or 1 tsp. ground ginger
- 2 green onions, cut in small pieces
- 3 Tbsp. soy sauce
- 1 Tbsp. sugar
- 2 Tbsp. dry sherry
- 1 tsp. salt
- 1 (8 oz.) can pineapple chunks
- 1 Tbsp. cornstarch
Directions

1With a sharp cleaver, cut the chicken into 2-inch pieces (bone and all), or have the butcher do it.

2Heat the oil to 365°.

3Fry the chicken in it until browned; drain.

4Put chicken pieces in a bowl and the ginger root, green onion, soy sauce, sugar, sherry and salt.

5Place bowl on a rack in a pan of boiling water.

6Cover and steam for 40 minutes, or until tender.
