- 1 medium head cabbage
- Salt and freshly milled black pepper
- 1 cup homemade Mayonnaise or Hellman's
- 2 tablespoons tarragon vinegar
- 1/4 teaspoon sugar
- 1 red or green bell pepper, cored, seeded, and cut into julienne
Directions

1Discard the outer cabbage leaves and cut in half.

2Core and, beginning at the core end, thinly slice.

3Place the cabbage in a large mixing bowl.

4Toss with 2 tablespoons salt and add cold water to cover.

5Let stand for 1 hour, drain and dry thoroughly.

6In a large bowl, combine the mayonnaise with the vinegar and sugar.

7Add the cabbage and red pepper and toss with the mayonnaise dressing.

8Season to taste with salt and pepper.

9Refrigerate and remove 20 minutes before serving, adjust the seasoning.
