  • smoked ham hock or 1/4 lb. fatback or side of bacon
  • 1 lb. collard greens
  • 1 red pepper pod
  • 1 medium onion
  • 1 clove garlic
  • salt, pepper and sugar to taste

Directions

    Boil meat until thoroughly cooked.

    Meanwhile, remove damaged leaves, roots and stems from collards.

    Wash well, making certain no sand remains.

    Add all ingredients to meat.

    Cover and cook until collards are tender.

    Drain.
