- 1 bunch fresh collard greens
- 3 slice smoked bacon
- 1 small onion
- 2 clove garlic
- salt
- Pepper
- Hot sauce
Directions

1Clean collard greens by stripping the leaves away from the stems and tearing the leaves into 3-inch-by-3-inch pieces.

2In a heavy bottom pot over medium heat render the bacon for about 3 minutes until it is about halfway cooked, then add the sliced onion and garlic and salt and pepper.

3Cook 3 minutes more until onion is soft.

4Add the greens and cover the pot and cook slowly for about 10 to 15 minutes until greens are nice and tender.

5Finish with a few shots of your favorite hot sauce.

6If the greens get dry at any point during cooking, add a few shots of water.
