  • 1 bunch fresh collard greens
  • 3 slice smoked bacon
  • 1 small onion
  • 2 clove garlic
  • salt
  • Pepper
  • Hot sauce

Directions

    Clean collard greens by stripping the leaves away from the stems and tearing the leaves into 3-inch-by-3-inch pieces.

    In a heavy bottom pot over medium heat render the bacon for about 3 minutes until it is about halfway cooked, then add the sliced onion and garlic and salt and pepper.

    Cook 3 minutes more until onion is soft.

    Add the greens and cover the pot and cook slowly for about 10 to 15 minutes until greens are nice and tender.

    Finish with a few shots of your favorite hot sauce.

    If the greens get dry at any point during cooking, add a few shots of water.
