- 2 ham hocks
- 1 large onion
- 2 tablespoons extra-virgin olive oil
- 2 mashed garlic cloves, smashed
- 1 quart water
- 6 bunches collard greens, cleaned
Directions

1In a large pot combine the ham hock, onion, extra-virgin olive oil, and smashed garlic.

2Add the water and bring to a simmer over medium heat.

3Simmer for 1 hour.

4Gradually add the collard greens to the stock pot.

5You will have to add the greens in stages to allow time for them to boil down.

6Once all your greens have been added, lower your flame to a soft boil, and allow them to cook until tender, about 55 minutes.
