- 1 (3 1/2 lb) frying chickens, cut up
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- oil (for frying)
- 1 1/2 cups sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 4 eggs
- 1 1/2 cups milk
- 3 tablespoons butter, melted
Directions

1Wipe chicken with clean damp cloth.

2Combine the 1/4 cup flour, 1 teaspoon salt and pepper.

3Roll chicken in mixture.

4In large skillet brown chicken in oil on all sides.

5Remove chicken from the pan and drain on paper towels.

6Heat oven to 350.

7In a bowl mix together remaining flour, baking powder and salt.

8Beat together eggs, milk and melted butter.

9Beat until light.

10Slowly add to flour mixture.

11Beat until batter is smooth.

12Pour batter into greased 12x7-inch baking dish.

13Arrange chicken pieces on top.

14Sprinkle with pepper if desired.

15Bake for 1 hour or until batter puffs and is golden brown.

16Serve at once.
