- 2 tsp. olive oil
- 1 c. sliced mushrooms
- 8 to 12 oz. cooked linguine
- 4 c. boiling vegetable stock
- 4 oz. firm tofu, cut into cubes
- 6 c. coarsely chopped spinach
- 2 Tbsp. soy sauce
- 6 sliced scallions
Directions

1Heat oil in soup pot.

2Add mushrooms and stir-fry for two minutes.

3Add noodles and stir-fry for one minute to heat through. Add boiling vegetable stock, tofu, spinach and scallions.

4Bring to a boil.

5Simmer for one-half hour.

6Serve with whole grain bread and tossed salad.
