  • 1 tablespoon vegetable oil
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 lb boneless skinless chicken breast, cut into cubes
  • 12 cup finely chopped onion
  • 12 cup finely chopped green bell pepper
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup water
  • 34 cup uncooked rice
  • 12 teaspoon salt
  • 12 teaspoon chili powder
  • 14 teaspoon pepper
  • 14 teaspoon paprika

    Preheat oven to 375.

    In a large skillet heat oil and butter.

    Add chicken, onion and green pepper; cook and stir until chicken is lightly browned and vegetables are tender.

    Stir in remaining ingredients.

    Transfer to a lightly greased 1 1/2 quart baking dish.

    Bake, covered, at 375 for 55-60 minute or until rice is tender.
