- 10 ounces frozen lima beans
- 2 tablespoons unsalted butter
- 4 slices bacon, cut into 1/4-inch slices
- 1 medium red onion, chopped
- 1 large green pepper, cored, seeded and chopped
- 4 cups fresh corn kernels
- 1/2 cup chicken broth
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
- 1 cup cherry tomatoes, each cut in half
- 1/2 cup flat leaf parsley, chopped
Directions

1Cook lima beans according to package directions. Drain and set aside.

2In large nonstick skillet, add butter and bacon.

3Cook over medium-high heat until bacon starts to brown, about 3 minutes.

4Stir in onion and green pepper and cook 10 more minutes, stirring occasionally.

5Add corn, broth, salt, pepper and cooked lima beans; simmer, uncovered, 5 minutes, stirring occasionally.

6Stir in cream, tomatoes and parsley and heat through.
