  • 6 average size potatoes (red preferably)
  • 2 c. Cheddar cheese, shredded
  • 1 1/2 c. sour cream
  • 1/4 c. margarine
  • 2 Tbsp. margarine
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 1 onion, chopped

Directions

    Cook potatoes in skin.

    Cool and shred.

    Combine cheese and margarine; heat until melted.

    Remove from heat and blend in sour cream, onion and seasoning.

    Fold into potatoes and turn into a 2-quart casserole.

    Dot with butter and paprika.

    Bake uncovered at 350° for 30 to 45 minutes.
