- 6 average size potatoes (red preferably)
- 2 c. Cheddar cheese, shredded
- 1 1/2 c. sour cream
- 1/4 c. margarine
- 2 Tbsp. margarine
- 1/4 tsp. pepper
- 1 tsp. salt
- 1 onion, chopped
Directions

1Cook potatoes in skin.

2Cool and shred.

3Combine cheese and margarine; heat until melted.

4Remove from heat and blend in sour cream, onion and seasoning.

5Fold into potatoes and turn into a 2-quart casserole.

6Dot with butter and paprika.

7Bake uncovered at 350° for 30 to 45 minutes.
