- 2 lb. ground conch
- 2 lb. diced potatoes
- 3 medium onions, diced
- 1 green pepper, diced
- 4 cloves garlic
- 8 bay leaves
- 1 tsp. oregano
- 1 can whole tomatoes, mashed
- 1 small can tomato paste
- 2 qt. hot water
- 2 Tbsp. barbecue sauce
- 1 tsp. poultry seasoning
- 1/2 tsp. black pepper
- 1 1/2 tsp. salt
- 1/4 to 1/2 lb. salt pork
- 1 spoonful vinegar
Directions

1Dice salt pork and fry out.

2Add diced garlic, green pepper and onions.

3Cook until well done.

4Add mashed whole tomatoes, tomato paste, poultry seasoning, oregano, bay leaves, salt, pepper and barbecue sauce.

5Cook over low heat.

6Bring water to a boil in large saucepan.

7Add vinegar and ground conch.

8Add other ingredients and cook 2 hours.

9Add diced potatoes and cook until tender.
