Ingredients
- 1/4 pound salt pork
- 2 medium onions chopped
- 4 cloves garlic crushed
- 1 large green bell peppers
- 1 pound tomatoes
- 6 ounces tomato paste
- 2 quarts water hot
- 1 teaspoon poultry seasoning
- 8 large conch
- 1 tablespoon vinegar
- 1 x salt and black pepper to taste
- 1 tablespoon oregano
- 4 each bay leaves
- 2 tablespoons barbecue sauce
- 9 medium potatoes peeled and sliced
Directions

1Dice the salt pork and fry in a large pot.

2Add the onions, garlic and green pepper.

3Cook until tender but not browned.

4Add the tomatoes, tomato paste, hot water and poultry seasoning.

5Cook over low heat while preparing conch.

6Pound the conchs with a small mallet to break up the tough tissue.

7Chop coarsely and add to the chowder.

8Bring to a boil.

9Add the vinegar, salt and pepper, oregano, bay leaves and the barbecue sauce.

10Bring to a boil again, cover, turn heat to low and simmer 2 hours.

11Add potatoes and simmer until potatoes are tender, about 20 minutes.
