  • 6 medium potato
  • 4 green onions, thinly sliced
  • 1/2 c. finely chopped green pepper
  • 1 stalk celery, thinly sliced
  • 1 small carrot, finely chopped
  • 3 hard-cooked eggs, chopped
  • 1/2 c. coleslaw dressing
  • 3 Tbsp. sour cream
  • 1 Tbsp. lemon juice

    Cook potatoes until tender.

    Drain and cool slightly.

    Peel and dice potatoes.

    Combine potatoes, green onions, green pepper, celery, carrots and eggs in large bowl.

    Combine dressing, sour cream and lemon juice; stir well.

    Add dressing to vegetable mixture, tossing gently.

    Sprinkle with paprika.

    It is best if made the day before you wish to serve it.
