- 1/2 lb. sliced bacon, diced
- 1 c. long grain rice, cooked
- 1 c. diced carrots
- 1 c. diced celery
- 1/2 c. fresh or frozen peas
- soy sauce (optional)
Directions

1Slightly cook carrots and celery; drain and set aside.

2In a large skillet, cook bacon until crisp.

3Remove to paper towels. Drain all but 3 tablespoons of drippings.

4Add rice, carrots, celery and peas.

5Cook until heated through, about 5 to 7 minutes. Stir in bacon.

6Serve with soy sauce, if desired.

7Makes 6 to 8 servings.
