- 30g butter
- 1 red onion, finely chopped
- 2 tablespoons plain flour
- 1 1/2 cups milk
- 250g small pasta shapes, cooked (eg. penne, macaroni, farfalle)
- 1 red capsicum, diced
- 310g can corn kernels, drained
- 1 cup grated pumpkin
- 1 zucchini, finely diced

Directions

1Melt butter over heat in a medium sized saucepan.

2Add onion, saute until translucent, do not brown.

3Add flour, cook, stirring, for 1 minute.

4Gradually add milk, stirring over low heat until the sauce thickens.

5Add remaining ingredients.

6Stir until combined.

7Pour mixture in a greased 20 x 30cm casserole dish.
