- 1 Tbsp. cooking oil
- 1 lb. zucchini, cubed (about 3 small)
- 1 to 2 garlic cloves, minced
- 1 (2 oz.) jar chopped pimiento, drained
- 1 (15 1/2 oz.) can whole kernel corn, drained
- 1 tsp. salt (optional)
- 1/4 tsp. lemon pepper
- 1/2 c. shredded Mozzarella cheese
Directions

1Heat oil in a large skillet.

2Saute zucchini and garlic for 3 to 4 minutes.

3Add pimiento, corn, salt (if desired) and lemon pepper; cook and stir for 2 to 3 minutes or until zucchini is tender.

4Sprinkle with cheese and heat until cheese melts.

5Yield: 6 servings.
