- 2 pounds cooking apples, such as Winesap
- 3/4 cup sugar
- 1 tablespoon ground cinnamon
- 1 cup water
- 1/4 cup unsalted butter
Directions

1Core and quarter apples (do not peel).

2In a large heavy saucepan combine all ingredients and bring to a boil, covered, over high heat.

3As soon as ingredients begin to boil, lower heat to a simmer.

4Simmer apples, covered, for 20 minutes.

5Remove pan from heat and let apples stand, covered, for 10 minutes before serving.
