Ingredients
- 1 qt. long grain rice, cooked
- 1/2 c. carrot, diced
- 2 Tbsp. soy sauce
- 2 eggs, beaten with 2 Tbsp. water
- 1/4 c. green onion, chopped
- 2 Tbsp. peanut oil or salad oil
- 1/2 c. green peas
- 1/2 Tbsp. pepper
- 2 Tbsp. salad oil
Directions

1Saute carrot and peas in hot oil in a skillet for 3 minutes. Add rice, soy sauce and pepper.

2Stir and cook for 2 minutes. Remove from heat; set aside and keep warm.

3Pour egg mixture in hot oil in a skillet to make thin egg pancake over medium heat. Remove to cutting board.

4Cut egg pancake into thin strips.

5Add to rice; mix well.

6Sprinkle with green onion over fried rice. Serves 4 to 6.
