- 6 medium yellow squash
- 4 thinly sliced pieces of pork side (fatback)
- 1 medium chopped onion
Directions

1Fry pork side in a skillet over low/medium heat until tender. (This is to season the squash.)

2Saute onion lightly in skillet with pork.

3Remove pork from skillet and add cut squash in about 1/8-inch thick slices.

4Cover with water.

5Add salt and pepper to taste.
