- 2 1/2 cups heavy cream
- 6 tbsp powdered sugar
- 1/2 tsp almond extract
- 2 (9 oz) boxes chocolate shortbread cookies, plus extra crumbs to garnish
- 1 cup fresh raspberries, plus extra to garnish
- None None chocolate curls and fresh mint, to garnish
Directions

1Whip heavy cream, powdered sugar and almond extract to soft peaks. Set aside.

2Arrange a single layer of cookies in an 8 inch circle on a serving platter. Spread 1 cup whipped cream over top. Repeat layers, ending with whipped cream. Freeze until firm.

3To serve, sprinkle with cookie crumbs and chocolate curls. Garnish with fresh raspberries and mint.
