- 2 cans (14 1/2 Oz. Size) Sliced Beets, Drained, Liquid Reserved
- 1 whole Large Apple, Peeled, Cored, And Chopped
- 1/4 cups Chopped Shallots
- 1 whole Large Orange, Juiced And Zested
- 2 Tablespoons Balsamic Vinegar
- 2 teaspoons Fresh Lemon Juice
- 2 ounces, weight Goat Cheese
- 2 Tablespoons Chopped Fresh Chives
Directions

1In a food processor, pulse beets, apple, shallots, and orange zest until pureed. Add reserved beet juice and pulse until smooth.

2Transfer beet mixture to a large bowl and stir in orange juice, vinegar, and lemon juice.

3Chill until cold, about 1 hour. Divide among bowls and garnish with goat cheese and chives.
