  • 1 c. low-fat cottage cheese
  • 1/4 c. skim milk
  • 1 Tbsp. lemon juice
  • 1/2 tsp. Dijon mustard
  • 1 clove garlic, minced
  • 1 Tbsp. minced parsley
  • 1 Tbsp. minced fresh basil or 1/2 tsp. dried

Directions

    In a blender or food processor, puree the cottage cheese, milk, lemon juice, mustard and garlic until smooth.

    Transfer to a bowl.

    Stir in the parsley and basil (another herb may be used for variety).

    If too thick, thin with skim milk or non-fat yogurt.
