Cool Rise Cinnamon Rolls

- 5 to 6 c. flour
- 1/2 c. oleo, softened
- 4 tsp. dry yeast or 2 envelopes
- 2 eggs (room temperature)
- 1/2 c. sugar
- 1 1/2 c. hot tap water
- 1 1/2 tsp. salt
Directions

1Combine 2 cups flour, sugar, yeast and salt.

2Add oleo, hot water and eggs.

3Beat with mixer for 2 minutes at medium speed. Gradually add remaining flour until it pulls away from sides of bowl.

4Remove and knead until elastic.

5Cover with plastic and towel and let rest 20 minutes.

6Punch down and divide in half. Roll out and spread with oleo, brown sugar, cinnamon and nuts. Roll into jelly roll and slice 1 to 1 1/2-inch slices.

7Place in jelly roll pan.

8Brush lightly with oil. Cover with plastic wrap and let rise in refrigerator overnight.
