- 1/2 c. (1 stick) butter
- 1 (3 oz.) pkg. cream cheese
- 1 c. all-purpose flour
- 1 lb. fresh spinach, washed and trimmed
- 3 eggs
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 8 slices bacon, cooked and crumbled
- 1 c. fresh mushrooms, sliced
Directions

1In food processor with steel blade or in large mixer bowl, cut butter and cream cheese into 1 cup flour until mixture forms a smooth dough.

2Roll out to fit a 9-inch pie or quiche pan.

3Freeze 10 minutes.

4In large saucepan, place spinach.

5Cook over medium heat a few minutes until wilted.

6Drain and chop.

7Drain well on paper towel.

8In a large bowl, combine spinach with the 2 tablespoons flour.

9Mix in remaining ingredients.

10Pour mixture into prepared pastry shell.

11Bake at 350° for 50 to 60 minutes until set in the center.

12Makes 1 (9-inch) quiche.
