Copper Mountain Quiche

Ingredients

  • 1/2 c. butter
  • 4 oz. cream cheese
  • 1 c. + 2 Tbsp. flour
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 c. cheddar cheese, grated
  • 1 c. Swiss cheese, grated
  • 3 eggs, lightly beaten
  • 1/2 c. mayonnaise
  • 1/2 c. milk
  • 10 slices crisp bacon, crumbled
  • 8 oz. fresh mushrooms sliced
  • 1 bunch green onions, trimmed and sliced

Directions

    Combine butter, cream cheese and 1 cup flour with a pastry blender until crumbly.

    Press into pie plate to form crust. Refrigerate.

    Preheat oven to 350°.

    Cook spinach until tender. Drain and blot on paper towels to remove all excess water.

    In a large bowl combine spinach and 2 Tablespoons flour.

    Add remaining ingredients and mix well.

    Pour mixture into chilled shell and bake 1 hour or until set.
