- 1 tablespoon olive oil
- 2 cups chopped leek
- 2 garlic cloves, minced
- 1 1/2 teaspoons paprika
- 1/4 teaspoon ground red pepper
- 1 cup dry red wine
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 4 (6-ounce) cod fillets
Directions

1Heat oil in a large nonstick skillet over medium-high heat until hot. Add leek and garlic; saute 3 minutes. Add paprika and red pepper; saute 1 minute. Add wine and tomato paste; reduce heat, and simmer 4 minutes.

2Sprinkle salt evenly over both sides of fillets. Add to pan, nestling fillets in leek mixture. Cover, reduce heat, and simmer 15 minutes or until fish flakes easily when tested with a fork.
