- 3 lb. baking potatoes
- 2 onions
- 1 1/2 oz. butter
- 1 Tbsp. coriander
- salt and pepper
Directions

1Pierce potatoes with a fork and bake at 400°

2for 40 minutes, or until softened, but not cooked through.

3Peel and finely chop onions until soft without browning (5 to 7 minutes).

4When potatoes are cool, peel and grate coarsely.

5Add cooked onions and seasonings.

6Spoon mixture into 16 rough mounds on a greased baking sheet.

7Bake at 400°
