Ingredients

  • 2 cans creamed corn
  • 1 1/2 c. Minute rice
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 stick butter
  • 1 small jar pimentos
  • salt and pepper to taste

Directions

    Saute onion and pepper in butter until tender.

    Add other ingredients, except rice.

    Put rice in bottom of casserole; pour other ingredients over it.

    Mix well and top with grated cheese. Cook at 350° for 20 to 30 minutes, until cheese is melted and browned.
