Corn-Bacon Relish

  • 2 cups frozen corn, thawed
  • 14 cup maple syrup
  • 4 slices bacon, finely diced
  • 1 medium sweet onion, finely diced
  • salt
  • fresh ground black pepper

Directions

    In a saute pan, saute corn and maple syrup until caramelized; set aside in a bowl.

    In same skillet, add bacon and cook until almost crisp, drain fat, add onion and cook until translucent.

    Add corn mixture back to pan and cook through for 3 more minutes.

    Serve.
