  • 2 eggs, slightly beaten
  • 1 1/4 c. milk
  • 1/4 c. melted shortening
  • 1 1/2 c. yellow corn meal
  • 3/4 c. sifted flour
  • 1 tsp. salt
  • 2 Tbsp. sugar
  • 2 1/2 tsp. baking powder

Directions

    Beat eggs and add milk and shortening.

    Sift remaining ingredients together; add to egg mixture and beat well.

    Pour into hot, greased 8-inch cast-iron skillet and bake in hot oven (400°) until it shrinks from the sides of the skillet, about 20 to 25 minutes, or until golden brown.
