  • 1 c. flour
  • 1/4 c. sugar
  • 4 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. yellow cornmeal
  • 2 eggs
  • 1 c. milk
  • 1/4 c. shortening

Directions

    Sift flour with sugar, baking powder and salt.

    Stir in cornmeal.

    Add eggs, milk and shortening.

    Beat with rotary or electric beater until just smooth.

    Pour into greased 9 x 9 x 2-inch pan or 10-inch iron skillet.

    Bake at 425° for 20 to 25 minutes.
