  • 1 c. all-purpose flour
  • 1 c. yellow cornmeal (I use Hodgson Mill stone ground)
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 2 eggs, beaten
  • 1 c. milk
  • 1/4 c. vegetable oil

Directions

    In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt.

    Add eggs, milk and oil.

    Beat just until moistened.

    Spoon into a greased 8-inch square baking pan or an 8-inch round iron skillet.

    Bake at 400° for 20 to 25 minutes or until bread tests done.
