Ingredients

  • 1 c. corn meal
  • 1 c. flour
  • 1/4 c. sugar (optional)
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 egg
  • 1/4 c. vegetable oil

Directions

    Combine in medium size bowl the first 5 ingredients.

    Beat in rest of ingredients until smooth.

    Pour into a greased 8 x 8 x 2-inch baking pan.

    Bake in 425° oven for 20 minutes or until top springs back when lightly touched.

    Cool in pan on wire rack only!
