- 1 c. sifted flour
- 1 c. yellow cornmeal
- 3/4 tsp. salt
- 1/2 c. sugar
- 4 tsp. baking powder
- 1 c. plus 2 Tbsp. milk
- 1 egg
- 4 Tbsp. cooking oil or soft shortening
Directions

1Sift together in a large bowl the flour, cornmeal, salt, sugar and baking powder.

2Add the milk and egg. Beat for 1 minute, then add the cooking oil or soft shortening.

3Beat for 1 more minute. Place 2 teaspoons oil in an 8-inch cake pan.

4Pour in batter.

5Oil will rise, greasing pan. Bake in a 375° oven for 25 minutes. Split and toast any left.
