  • 1 c. sifted flour
  • 1 c. yellow cornmeal
  • 3/4 tsp. salt
  • 1/2 c. sugar
  • 4 tsp. baking powder
  • 1 c. plus 2 Tbsp. milk
  • 1 egg
  • 4 Tbsp. cooking oil or soft shortening

Directions

    Sift together in a large bowl the flour, cornmeal, salt, sugar and baking powder.

    Add the milk and egg. Beat for 1 minute, then add the cooking oil or soft shortening.

    Beat for 1 more minute. Place 2 teaspoons oil in an 8-inch cake pan.

    Pour in batter.

    Oil will rise, greasing pan. Bake in a 375° oven for 25 minutes. Split and toast any left.
