  • vegetable oil, to grease skillet
  • 2 eggs, beaten
  • 18 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 12 cups yellow cornmeal
  • 1 12 cups all-purpose flour
  • 12 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 12 cup butter, melted (1/4 cup)

    Preheat oven to 400 degrees F; grease a 12-inch cast iron skillet with oil.

    Place skillet in oven until sizzling, about 5 minutes.

    Meanwhile, in a bowl, combine eggs, vanilla, and buttermilk.

    In a large bowl, combine the cornmeal, flour, baking powder, salt and sugar; make a well in the center of the dry ingredients.

    Pour in the egg mixture and combine with a few rapid strokes; fold in melted butter.

    Pour batter into sizzling pan and bake until the top feels firm when pressed, about 20 minutes.
