- vegetable oil, to grease skillet
- 2 eggs, beaten
- 18 teaspoon vanilla extract
- 1 cup buttermilk
- 1 12 cups yellow cornmeal
- 1 12 cups all-purpose flour
- 12 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 12 cup butter, melted (1/4 cup)
Directions

1Preheat oven to 400 degrees F; grease a 12-inch cast iron skillet with oil.

2Place skillet in oven until sizzling, about 5 minutes.

3Meanwhile, in a bowl, combine eggs, vanilla, and buttermilk.

4In a large bowl, combine the cornmeal, flour, baking powder, salt and sugar; make a well in the center of the dry ingredients.

5Pour in the egg mixture and combine with a few rapid strokes; fold in melted butter.

6Pour batter into sizzling pan and bake until the top feels firm when pressed, about 20 minutes.

7Serve in wedges.
