- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 4 teaspoons baking powder
- Salt and freshly ground pepper to taste
- 1 teaspoon sugar
- 1 egg, beaten
- 1 cup milk
- 1/4 cup melted shortening, plus grease for pan
Directions

1Preheat oven to 425 degrees.

2Combine cornmeal, flour, baking powder, salt, pepper, sugar, egg and milk.

3Blend well with a wire whisk.

4Stir in shortening.

5Grease a shallow baking pan, 9 by 9 by 2 inches.

6Pour in batter, and bake 30 minutes, or until done.

7Do this a day early.
