  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • Salt and freshly ground pepper to taste
  • 1 teaspoon sugar
  • 1 egg, beaten
  • 1 cup milk
  • 1/4 cup melted shortening, plus grease for pan

Directions

    Preheat oven to 425 degrees.

    Combine cornmeal, flour, baking powder, salt, pepper, sugar, egg and milk.

    Blend well with a wire whisk.

    Stir in shortening.

    Grease a shallow baking pan, 9 by 9 by 2 inches.

    Pour in batter, and bake 30 minutes, or until done.

    Do this a day early.
