- 12 c. coarse corn bread crumbs
- 2 c. day-old light bread crumbs
- 4 eggs
- 1 tsp. black pepper
- 3 tsp. poultry seasoning
- 1/2 c. butter
- 1 c. onions, chopped fine
- 2 c. celery, chopped fine
- 2 tsp. salt
- 2 tsp. sage
- turkey from neck and giblets
Directions

1Cook neck and giblets until tender.

2Remove neck and giblets. Save giblets for giblet gravy.

3Save stock for dressing.

4In stock from neck and giblets, cook onions and celery for 30 minutes. While onions and celery are cooking, in a large bowl, mix other ingredients.

5Then, add onions, celery and turkey stock along with enough stock from roasted turkey to make a soft dressing; mix well.

6Have dressing soft, about consistency of cake batter.

7Bake in greased baking pan in preheated 400° oven for 30 to 40 minutes.
