- 1 c. sifted flour
- 1/4 c. sugar
- 3 tsp. baking powder
- 3/4 tsp. salt
- 1 c. corn meal
- 2 eggs
- 1 c. milk
- 1/4 c. melted shortening or cooking oil
Directions

1Heat oven to 425°.

2Grease muffin cups.

3Sift together the flour, sugar, baking powder and salt; stir in corn meal.

4In a medium size bowl, beat eggs just enough to blend yolks and whites. Stir milk and shortening into eggs.

5Add dry ingredients; stir to blend, just until smooth.

6Fill greased muffin cups 3/4 full. Bake for 25 to 30 minutes.
