- 1 box Jiffy corn bread mix
- 1 bell pepper
- 1/4 c. onion
- 8 slices cooked bacon
- 2 to 3 tomatoes
- 1 c. mayonnaise
- pickle juice
Directions

1Bake Jiffy corn bread according to directions; cool and crumble.

2chop pepper, onion and tomatoes.

3Mix well with 1/2 cup pickle juice and cooked, crumbled bacon.

4Mix the mayonnaise and 1/3 cup pickle juice.

5Layer 1/2 of cornbread, 1/2 tomato and 1/2 of mayonnaise mixture over top.

6Repeat; reserve some bacon over the top before serving.

7Refrigerate overnight.
