  • 8 corn bread 8 inch, cut into cubes or 12 small corn bread muff
  • 1 head romaine lettuce torn or cut roughly
  • 1 pound edamame shelled
  • 2 tomatoes thick sliced
  • 1/4 onion - red or yellow, diced small
  • 2 tablespoons chives dried
  • 1 bottle blue cheese dressing

Directions

    Layer the salad in a large bowl in the following order, lettuce, 1/2 cornbread, onion, tomatoes, edamame, then rest of cornbread.

    Garnish with chives and serve with dressing, on side
