- 1 pkg. Jiffy corn bread mix
- 2 large fresh tomatoes
- 1 large bell pepper
- 1 large onion
- 1/2 c. sweet pickle relish
- 1/2 c. mayonnaise
- 4 slices ham, chopped
Directions

1Bake muffins as directed on package.

2Crumble 1/2 of muffins in bottom of bowl.

3Layer tomatoes, pepper and onions (all vegetables are chopped).

4Add chopped ham.

5Mix pickle relish with mayonnaise.

6Cover salad with mayonnaise mixture.

7Top off with remaining muffins, crumbled.

8Refrigerate overnight, covered.
