- 1 can whole corn (undrained)
- 1 can cream-style corn
- 1 pkg. Jiffy corn muffin mix
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 eggs, slightly beaten
- 1/2 stick oleo/butter
- 1 c. grated Cheddar cheese
Directions

1Saute onion and green pepper in oleo/butter.

2Mix corn, eggs, onions and peppers together.

3Stir in muffin mix.

4Top with cheese and bake for 30 to 45 minutes at 350°.
