  • 1 can whole corn (undrained)
  • 1 can cream-style corn
  • 1 pkg. Jiffy corn muffin mix
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 eggs, slightly beaten
  • 1/2 stick oleo/butter
  • 1 c. grated Cheddar cheese

Directions

    Saute onion and green pepper in oleo/butter.

    Mix corn, eggs, onions and peppers together.

    Stir in muffin mix.

    Top with cheese and bake for 30 to 45 minutes at 350°.
